Panini Monster

Yep...that's what I am. I unwrapped the Panini maker and I have been in Panini heaven ever since. I thought I would make one sandwich and put the machine away...it hasn't left the counter.

My first Panini was a Portobello,sun-dried tomato and fresh mozzarella concoction. I marinated the mushroom in balsamic vinegar and olive oil before lightly grilling it . Using Ciabatta bread that is so perfect for Paninis, I heaped on field greens, sliced mozzarella and sun-dried tomatoes and topped it with the portobello.

After pre-heating the pre-oiled Panini maker - I centered the sandwich onto it hearing that wonderful sizzle. I close the lid giving it a nice pressing. It is crispy on the outside, gooey cheesy and tender on the inside.
